Creamy Tomato Soup Recipe

INGREDIENTS

whole canned tomatoes butter  onion white wine half & half or cashew milk (DF) fresh basil s+p

WHAT YOU'LL NEED

Grab a  4qt soup pot or dutch oven

Assemble the ingredients

Get out your blender

In a 3-5 quart dutch oven, saute onion in butter on medium until translucent for about 5 minutes. Add garlic and saute for about 30 seconds until you can smell it.

Add the white wine and cook until the wine has reduced in half, about 3-5 minutes.

Meanwhile, puree tomatoes to desired consistency or if using, tomato puree skip this step.

COOKING TIP

Add tomatoes, salt and pepper to wine mixture and simmer for 15 minutes. Add the milk/cream before serving. Garnish with basil.
