PROTEIN

A moist flavorful meatball starts with...you guessed it...the meat. Traditionally, beef, pork, and veal are used in Italy depending on which part of the country you're from.

FAT

The ground beef needs to be 80% lean. This isn't the time for super lean beef.  We're making meatballs, not steak balls!

TOUCH

Great meatballs are all about touch. Don't roll the meatballs too tight. Be gentle!

MOISTURE

Meatballs need a binder (eggs, breadcrumbs or both). They also need a little moisture (milk or in our case...water - yep water!)
