Make sure your beef tenderloin is trimmed - ask your butcher!

Preheat oven to 599˚-yes...500˚!

INGREDIENTS

small beef tenderloin Dijon mustard butter salt + pepper fresh parsley horseradish sauce (recipe included) homemade blue cheese dressing (recipe included)

WHAT YOU'LL NEED

Coat all sides of the trimmed beef with a mixture of butter and Dijon mustard.

Add a really generous amount of kosher salt and pepper...don't be shy! Sprinkle on parsley.

Make sure your oven and oven racks are pretty clean to reduce the smoking at the high temp!

ROASTING TIP

Roast in the preheated oven until a thermometer registers 135˚ for medium rare. Remove and let sit.

Serve with horseradish sauce or blue cheese dressing on slider buns!
