INGREDIENTS

2 lb diced butternut squash olive oil 6 oz Tuscan kale 3 apples 3 Tbsp. roasted, salted sunflower seeds 1 container diced pancetta ¼ cup apple cider vinegar

Grab a small skillet

Assemble all your ingredients

Toss diced squash with a little olive oil in a sheet pan and roast in a hot oven.

While the squash is roasting, chop up apples, kale and set aside.

In a small skillet, saute the diced pancetta over medium heat. Add the vinegar

Heat the apple cider vinegar in the pancetta and simmer. Dressing ✔️ !

Assemble the salad: kale, apples, squash and drizzle with dressing. Sprinkle with sunflower seeds.

For a variation, add some pasta and crumbled blue cheese.
