Gather a grater or food processor with a shredding disc.

Grab a big mixing bowl.

Rinse, clean and dry the Brussels sprouts.

WHAT YOU'LL NEED

Grate by hand or shred Brussels sprouts in a food processor fitted with a shredding disc.

Trim the fennel bulb by cutting in half first, removing the core and then chopping/shredding.

Juice up the Cara Cara oranges to make the tangy dressing.

Add the dressing and toss with all the vegetables in a big bowl...so GOOD!
