INGREDIENTS

chicken breasts celery onion carrots garlic flour thyme chicken broth apple cider vinegar ricotta  salt + pepper parmesan fresh parsley egg

WHAT YOU'LL NEED

Saute chopped carrots, onion and celery in some butter for 5 minutes. Add garlic and thyme.

Make a roux to thicken the broth (I'll teach you how!)

Pour in the chicken broth and a little apple cider vinegar for some tang and bite.

Whisk an egg in a medium mixing bowl until blended and add ricotta - MAKES FLUFFY DUMPLINGS!

Add flour and parsley

cook the dumplings

Drop the dumplings from a heaping soup spoon into the simmering broth and cook for about 10-12 minutes. EASY!

Keep the lid on the pot while cooking the dumplings so that they cook on top!
