INGREDIENTS

shredded chicken sharp cheddar chiahuahua cheese adobo chiles chili powder cumin chicken broth tortillas green onions

Start the homemade enchilada sauce by making a roux with onions, butter and flour.

Add chicken broth and a blended tomato spice mixture and simmer.

As the sauce simmers, shred up cooked chicken breasts or use a rotisserie chicken.

Dip a tortilla in sauce and roll around chicken and cheese. Repeat.

Cover with more sauce and cheese and bake until bubbly!
