INGREDIENTS

 bag frozen cheese tortellini cooked turkey breast links of Italian sausage  dried sage onion garlic tomato paste turkey stock fresh baby spinach Parmesan

Grab a soup or stock pot

Assemble all your ingredients

Cook the tortellini in salted, boiling water for half the time .

Coook the sausage and sage. Cook until no longer pink, crumbling while breaking up the meat with a spatula or wooden spoon.

RECIPE TIP Drain cooked sausage on a plate covered with several layers of paper towels. That way your soup is free of extra grease!

Saute onion and garlic in a pan until golden.

Add the tomato paste to the soup pan and swirl around in the pan until caramelized about 1-2 minutes.

Add the turkey stock and eventually spinach, tortellini and sausage.

A big squeeze of lemon is the finishing touch to this leftover turkey soup!
