Parmesan Farrotto

Farrotto is when you use farro (an ancient grain) instead of arborio rice to make risotto

What is farrotto?

Farro is a chewy grain with a nutty flavor and it adds so much texture and flavor to risotto.

Ingredients

FARRO BUTTER ONION GARLIC WHITE WINE CHICKEN BROTH PARMESAN  SALT PEPPER

You can make farrotto ahead and reheat with my easy tips...and it'll still be creamy!

Use semi-pearled farro...the 10 minute one at Trader Joe's is perfect!

Recipe Notes

Use a skillet with high sides.

the onions and garlic in a large skillet.

the farro in the skillet until toasted.

in white wine and cook for 2 minutes until absorbed.

You'll add one ladle of broth in first and then all the broth and cook until absorbed with little to no stirring!

This farrotto recipe is easier than risotto...
