Shred cooked chicken (either rotisserie or homemade)

Gather all your ingredients and a big mixing bowl.

INGREDIENTS

chicken breasts celery onion carrots garlic flour thyme chicken broth apple cider vinegar ricotta con latte salt + pepper parmesan fresh parsley egg

WHAT YOU'LL NEED

Saute chopped carrots, onion and celery in some butter for 5 minutes. Add garlic and thyme.

Sprinkle in some flour and stir for 2 minutes to cook off the flour taste making a roux.

Pour in the chicken broth and a little apple cider vinegar for some tang and bite.

Whisk an egg in a medium mixing bowl until blended and add ricotta - MAKES FLUFFY DUMPLINGS!

Drop the dumplings from a heaping soup spoon into the simmering broth and cook for about 10-12 minutes.
