INGREDIENTS

chicken broth adobo chiles olive oil onion garlic  flour butter tomato sauce chili powder onion salt cumin kosher salt sugar (just a bit!)

WHAT YOU'LL NEED

Blend the broth, chiles and some adobo sauce together until smooth.

Chop up the onion and garlic and gather all the spices together!

In a medium saucepan, saute the onions in some olive oil until lightly golden. Stir in the garlic followed by the flour and butter to make a roux. Cook off the flour flavor.

Add in the blender chile mix along with some chicken broth and simmer until thickened.

Pour the creamy red adobo enchilada sauce at the bottom of the pan first and then over your rolled enchiladas.
