Preheat the oven to 350˚

Shred the turkey (or chicken if using)

Assemble all the ingredients

shredded turkey (or chicken) sharp cheddar chiahuahua cheese adobo chiles chili powder cumin chicken broth tortillas green onions

WHAT YOU'LL NEED

To make the easy enchilada sauce, saute some onions and add some flour and butter to make a roux.

Add broth and a blended tomato spice mixture and simmer away.

As the sauce simmers, shred up the poultry meat.

Dip a tortilla in sauce and roll around meat and cheese. Repeat.

Cover with more sauce and cheese and bake until bubbly! SO GOOD!
