A great holiday dessert recipe for a group. So easy!

Tastes like your favorite sandwich cookie with a bright spot of mint and rich ganache.

Homemade or store-bought ingredient options

Prepare a 9x13" pan

FOR THE HOMEMADE WHIPPED CREAM

Step 1

Make the cookie crumbs

either use a food processor or fill a ziploc with cookies and crush with a rolling pin! 

Step 2

Make the easy ganache

pour warm heavy cream over chocolate chips and stir until it makes a creamy ganache

Step 3

Whip up some cream

with a little powdered sugar and vanilla

Step 4

Prepare the ice cream

to cut the ice cream right  through the container!

Step 5

Start layering the cake...first up the cookie crumbs!

press hard with a spatula to make a great crust .  bake for 10 minutes.   Save some to garnish!

Pour ganache on cooled crust...

even it out with a spatula... and be sure to lick the bowl!

Lay on a patchwork of thick slices of ice cream 

Done is perfect!!

Spread on the whipped cream and sprinkle with more cookie crumbs..make it pretty!

HINT: Cool Whip works too!

Place in the freezer overnight to firm up and get ready to serve up a new dessert for the holidays!
