Easy Thumbprint Cookies

These Lemon Drop Cookies are a bite of Spring!  And making them is so easy...

INGREDIENTS

butter powdered sugar sugar flour lemons egg

Mix flour, powdered sugar and butter in a mixer.

Take a 1" piece of dough and roll into a ball.

Lightly press the dough with your thumb or index finger to make small divots. Don't press too hard!

Add the ingredients for the lemon curd to a small saucepan.

EGG

LEMON ZEST AND JUICE

Cook over low heat, stirring until the lemon curd thickens.

Fill the cookies with the curd (use a small baby spoon!)

Sprinkle on some powdered sugar and serve with coffee, tea or a light dessert. Perfect Easter dessert!
