Roasted Delicata Squash

It's got savory, sweet and spicy BIG FLAVOR

INGREDIENTS

Delicata squash ancho chile powder crushed red pepper fresh thyme dried cranberries s+p

WHAT YOU'LL NEED

Oil a  baking sheet

STUFF TO DO

Wash the delicata squash 

Preheat oven to 400˚

Slice squash in half and then take a little off each end to make a flat bottom. Use a small spoon to dig out the seeds.

Slice into ¼-½" slices (you can also slice first and remove the seeds after)

If you remove the seeds after, an apple corer is a great option. This makes a pretty scallop center!

Drizzle a baking sheet with some olive oil

Lay the cut slices of delicata squash on the oil and flip over to coat both sides.

Season with the spices, thyme and salt and pepper.

Roast until golden brown and caramelized.
