Butternut Squash  Crostata 

Flaky homemade pie crust is rustically wrapped around roasted butternut squash and ricotta

Crostata means "pie "in Italian

What is a crostata and why make it?

Wrap store bough or homemade pie dough around your favorite fillings

No fancy crimping needed!

1 recipe of chilled pie dough 1 lb butternut squash, cubed 2 T olive oil, divided 7.5 oz ricotta salt/pepper 2 eggs 4 T parmesan cheese , 1 T fresh sage leaves 1 small shallot 2 cloves of garlic 5 whole sage leaves 1 cup fresh spinach leaves 2 tsp fresh lemon juice 1 cup gruyere, grated ¼ tsp nutmeg


Roast cubed butternut squash for about 30 minutes at 400˚.

Roll out the pie dough between two sheets of parchment paper about 1/4" thick. Chill for about an hour.


Meanwhile saute the shallots and garlic in a skillet until browned


Mix up the super easy ricotta filling...


Spread the ricotta on the bottom of the crust and layer on squash, spinach and cheeses.


Fold the crust edge in and work your way around the crostata.


Sprinkle the edge with some fresh parmesan cheese and bake!


Serve with a salad for an easy brunch recipe or appetizer !
