Whipped Ricotta Toast with Figs

INGREDIENTS

Fresh figs (find in specialty produce section) fresh thyme leaves olive oil whole milk ricotta cheese sherry vinegar honey Italian or French bread milk, if needed

WHAT YOU'LL NEED

Cut bread in 1/2" slices and cut in half vertically. Drizzle with olive oil on both sides and toast in the oven till golden.

Place ricotta in a mixing bowl and add honey, vinegar and s+p.

Whip with electric mixer until smooth and creamy...you might have to add a little milk!

Slice the figs into halves or quarters depending on how big they are and drizzle with olive oil. Roast for 10 minutes tops!

Spread the toasted crostini with whipped ricotta...resist the urge to eat right then and there!

Top with roasted figs and a sprinkling of fresh thyme leaves.
