Using the back of a pan or meat tenderizer, pound the chicken flat between the parchment until it's even on all edges.

RECIPE HERE
Remove the parchment paper. Season the top of the chicken liberally with salt and pepper. Don't be shy!

Heat a large skillet over medium high heat and add the oil till it glistens.

Lay the seasoned side down in the pan and don't move it for 1 minute. Season the new top side.
