INGREDIENTS

chicken breasts kosher salt vine ripened tomatoes pesto fresh mozzarella mayonnaise Greek yogurt fresh lemon  fresh basil arugula ciabatta bread or rolls

WHAT YOU'LL NEED

Dissolve salt in water and stir until water is clear. Add chicken and brine.

Make a pesto aioli by mixing the yogurt, pesto, mayo and seasonings together.

Heat a grill to 400˚ and oil the grates lightly.

Add the chicken breasts to the grill and cook for 4-5 min per side or until the internal temp reaches 165˚.

Tomatoes not ripe? Roast sliced tomatoes in the oven until caramelized.
