What is semifreddo?

Translated in Italian, semifreddo means “half-frozen”. So unlike homemade gelato which is frozen hard and then scooped, a semifreddo doesn’t freeze as readily because of the ratio of ice cream to liquid (here, alcohol is included which doesn’t typically freeze).

How to make amaretto semifreddo

  • To a very large bowl, add the ice cream and the whipped topping.
  • Mix together to incorporate and then using a hand mixer mix in amaretto until smooth.
  • Pour into individual coupe glasses and freeze for about 4 hours.

    ½ cup amaretto, 1.5 quart vanilla bean ice cream, 1 container Cool Whip
