Think of this as your go-to sandwich spread, salad topper, or veggie dip. A perfect compliment to grilled or poached chicken when you need a little juju. And its name? Hope you agree it's well-deserved.
This sauce, dressing, dip, spread, best friend to spoon was born out of wanting something to go on my Summer Salad. I was rummaging through the fridge, threw some stuff in a bowl that was part-leftover, part-need to eat before it expires. And I wanted a dressing with a little punch. No - I wasn't going to add punch to the dressing. You know where I'm going with this. Anyway, in this avocado toast world we now live in, I knew I wanted them to be the star of my dressing. It's pretty much everything you need to make guacamole with a little sweet stuff thrown in a food processor or blender. And then? Magic.
After halving and coring your avocado, scoop out the inside and place in a blender or food processor. By the way, I have used both. My blender makes it fluffier if that makes any sense. And what you'll see in the pics below was in my food processor and is more of the dip/spread category. You can thin it out with anything you want. The recipe calls for water. With all the acid from the lime and lemon, water is best. But you do you.
You got everything in there? Don't forget a healthy plop of garlic. And depending on your blender/food processor, you don't even have to chop it. At this point, don't add the water just yet. You want to make sure you are happy with where the flavor is. Give it a good whirl and watch everything break down. I have little specks of cilantro. You can keep whirring away if you want it a more consistent color.
And there you have it. I call it avocado cilantro everything sauce because you can put it on and in almost everything. Tacos, burritos, quesadillas, eggs, wraps, bowls. A great way to use over-ripe (or over-bought) avocados
Don't chop the garlic if you are feeling a little spicy.
for a crowd:
Doubles or triples well but watch the lemon and lime. And leave out the water until the end.

Ingredients

- blender or food processor
Ingredients
- 1 avocado, ripe
- 1 jalapeno, seeded and halved
- 1 cup cilantro, chopped
- 2 teaspoon garlic, chopped
- 1 lime , juiced
- 2 teaspoon lemon, juice
- ½ teaspoon sugar or honey, to taste
- 3 tablespoon olive oil
- 4 tablespoon water
- salt and pepper, to taste
Instructions
- Halve and pit avocado and place in blender or food processor along with remaining ingredients. Blend until smooth. Taste and adjust for seasoning.
Hey Lori! I can see why you call this an everything sauce as it surely is, it could be used many ways and on many things. We spread it over baked salmon and it was delicious. I heated up a corn tortilla, spread some avocado cilantro sauce on it and shredded some of my salmon for a fish taco also while my hubby finished off his dinner dipping a few tortilla chips in the sauce.
